Three Easy Sheet Pan Dinners: Salmon with Potatoes and Broccoli

I've had this Quartz Weeknight Cooking: Three Easy Sheet Pan Dinners feature bookmarked since around when it was originally posted in early 2019, largely because I realized immediately the first time I read it that the second of the three sheet-pan dinners, Chickpeas and Cauliflower a) was vegetarian, b) was garlic free, and c) sounded ABSOLUTELY AMAZING. It is, and I now have it in regular rotation and highly recommend it! But the last time I had the page open to check the Chickpeas and Cauliflower recipe, I noticed that the first dinner, Salmon with Potatoes and Broccoli, was basically a recipe for slightly spiced-up roasted potatoes, another recipe for slightly spiced-up roasted broccoli, plus plain baked salmon.

I'm vegetarian, and don't eat fish, but I had the "I could make this but substitute fake chicken nuggets" thought, and today I saw it through. I used a Gardein fish-free golden fillet for the "fish," and I made the potatoes and broccoli and "fish" all on one baking sheet, which I lined with parchment paper.

This is not on the level of Chickpeas and Cauliflower either in taste or in simplicity, and if I make it again I won't bother with the fake fish (or I'll just give in to my first instinct and go for the fake chicken nuggets, a superior product). That said, the potatoes with just a hint of mustard were tasty! So was the broccoli with garlic and lemon juice and red pepper flakes. I used less lemon and garlic than the recipe called for (when will my digestive system return from its war with itself), and possibly a lot more broccoli, and I think more lemon juice and garlic would be good if you can tolerate them! I'll probably make the potatoes and broccoli again, either together or separately.
