Coconut Carrot Cake Cupcakes

jenabI made Coconut Carrot Cate Cupcakes. last week from Sally's Baking addiction site. They turned out moist and delicious.
I didn't use coconut extract in either the filling or frosting. I also didn't use toasted coconut flakes for the topping. Overall, they were easy to make and stayed moist for 5 days. I found the frosting recipe made too much frosting for my preference. Next time I'll either half the recipe or freeze half the icing.
Sally's baking addictions site is becoming one of my favorite sites not only for her recipes but also for the tips she provides.
