Apple Tarte Tatin

Have been intending one of these for a while, finally got my opportunity during the height of autumn apple-ness around here when I was invited to a party of gardeners when we were to bring a plate.

I used Kanzi apples which is one of the newer breeds around here: a nice eating apple, with pretty good flavour and tang, but also good for baking (so they said).

Recipe was from Donna Hay's Modern Classics Vol 2, p170.

This was really easy to make, almost surprisingly so. I did end up separating the part where the apples are cooked on the stove in a pan from the part where the apples and the pastry are baked in the oven in the pan. I used a frypan on the stove to butter-toffee the apples, and then transferred them to a shallow cake pan to bake the apples and the pastry.

It worked a dream, tasted delish, and there wasn't any left to take home from the party. Always a good sign.

Would definitely make again.
