Maya Angelou's Fried Apples

I pulled off one of the cookbooks that I didn't purge but haven't used since I moved.
Hallelujah! the Welcome Table: A Lifetime of Memories with Recipes by Maya Angelou

Next, I picked something simple with ingredients I already had on hand. I love fried apples and her method wasn't what I'd done in the past, so I thought I'd give it a try.

Serves 6

6 Granny Smith apples
2 McIntosh apples
4 tbl. butter
2 tbl. brown sugar
1 c. water
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Quarter and core apples, but do not peel. Melt butter in large frying pan, and place apples skin side down in pan. Sprinkle with brown sugar, and add water. Add cinnamon and nutmeg, cover, and good very slowly over low heat until tender and candied. Eat hot.


Changes I made because honestly I can't help myself:
- I have these HUGE honeycrisp apples, so I used one of those.
- I didn't measure anything, but guesstimated a proportion based on approx. 1/3 except for sugar which I used just a spoonful.
- I used Penzy's apple pie spice instead of cinnamon. I still used nutmeg.
- I didn't use the pan that has a lid that fits, so mine didn't turn out quite as tender. They were nice and "candied" (sauce was thick) about 10 minutes(-ish).
- I put less than half of them on top of my morning (cold) oatmeal and sprinkled some pecans on top. Cold oatmeal and hot apples is THE BEST #omnomnom. The rest are in the fridge for tomorrow's breakfast. Or perhaps I'll have them over vanilla ice cream later? IDK - maybe both it was a really BIG apple
