Like many other people, I received an Instant Pot for Christmas this year, so today I opened the box, read the instructions, and made Instant Pot Orange Chicken:

Ingredients

Meat:
2 lbs chicken breast or thighs (cut into 1-2 inch pieces)
2 tablespoons vegetable oil

Sauce:
1 cup orange juice (no sugar added)
1 tablespoon ginger (grated)
6 cloves garlic (minced)
1 tablespoon rice wine (or dry white wine**)
1/2 cup tomato sauce (optional)
¼ cup granulated sugar
¼ cup brown sugar
¼ cup lite soy sauce
1 tablespoon Sriracha***
zest from 1 orange

Cornstarch Slurry:
2 tablespoons cornstarch
2 tablespoons orange juice

Garnish:
4 green onions (sliced)
extra orange zest

I used white wine instead of rice wine, and I left out both the sriracha and the tomato sauce. The chicken and sauce are pretty good, especially over rice. I would definitely add at least a pinch of salt next time, though - it needs something to brighten it up a little at the end. Possibly that's what the two optional ingredients are for.
