Chimichurri Chicken; and Lentil Curry

Hi everyone! I have been following this community since January and am signed up for the "three or more recipes a month" level. I've been posting to my journal instead of here, but decided I should really make an attempt to foster community on Dreamwidth and will plan to post here more in the future! You can find previous posts under this tag in my journal. I've been cooking a lot more often over the past couple of years, and last fall I took pictures of just about everything I made, but this community has been the push I needed to actually post about it (especially the bingo cards!).

I've cooked two meals in the last week. (Plus one bonus meal.)

On my bingo card, I'm using the curry for "used the same website more than once" (it's at least the second time I've used a WaPo recipe for the challenge) and chimichurri for "used green ingredient(s)."

Doughnut Muffins

First challenge post! This all came about when I heard tell of a muffin that would combine the texture and taste of a cake-type doughnut (as opposed to a yeast-type doughnut) in a form that wouldn't require frying and in fact could be baked in a muffin tin. My first attempt was with this recipe, which sadly did not turn out anything like a cake doughnut but was in fact more like a very dry crumb cake -- not recommended. However, the King Arthur Flour version, my second option, did not disappoint and in fact was exactly what I was looking for: moist and cakey inside with a firm, slightly crisp outside, with the nutmeg taste that really sells the recipe. Even without the cinnamon-sugar topping, these are excellent with a cup of coffee or a glass of milk.
