This Samin Nosrat recipe for Pork braised with chili sounded really tasty.

I followed the recipe fairly precisely, but I don't drink beer and the only alcohol I had around the house was fairly dry cider, I used that. Cider is my go to braising choice for pork. The end result was okay, but it wasn't the tastiest roast pork I've made. The sauce was okay, not outstanding.
