Friday I decided to try to replicate my Granny's salmon patties. For some reason, I have been in a 1950's housewife mood. I made a shake n bake fest with double everything starches and vegs. One was green bean casserole. Thursday was liver by request.
The recipe I had was just can salmon and cream of mushroom soup. That is why I have a ton of recipes saved to try to replicate hers.
I opted for the Chicken of the Sea pink salmon in the pouch. They had me at boneless and skinless.
Old School Salmon Patties
3 pouches of salmon
onion powder
1 egg plus one yolk
bread crumbs ( I used Italian seasoned)
cooking spray
1 can of cream of mushroom soup.
empty pouches into a bowl. sprinkle heavily with onion powder. I added enough bread crumbs to just coat the fish. I added one yolk and it was still dry so added the whole egg. Mix well. I let it sit for a few minutes. I portioned out three good-sized patties. I sprayed a skillet with cooking spray and cooked until nicely browned. I sprayed the patties and flipped and cooked until the other side was browned and crispy.
I topped them with cream of mushroom soup and served them with mashed potatoes and green. beans.
