I made this for an Autumn equinox party with my gardening friends.

Vegetable Spiral Tart at Bunsen Burner Baking

I liked the look of the recipe because it was pretty and stunning and used up vegetables without needing to have an eggy/quiche base.

notes, thoughts, adjustments: I added eggplant to the vegetables, but not having a mandoline meant it was difficult to get them to an even thickness, so none of them are quite as even as I'd like. Also, the various vegies cook at different rates, so the eggplant was just cooked while the leeks were overdone.

Creating the spiral was a pain: trying to get everything to sit still? And considering most of my veg was backyard grown and therefore on the small side? Even more difficult!

I will definitely make it again - difficult or not, it was delicious. And it does present very prettily on the plate!

I've been wanting to make this one for a while; glad I finally got a chance to get around to it. :)

Overall, I liked this quite a bit! Very different from my usual, and pretty tasty. Can easily be made vegetarian-friendly if you swap out the chicken stock for vegetable stock. I could see myself making this again. Might add more vegetables next time - cauliflower could be nice. (Suggestions welcome.)
