Baked Eggs with Mushrooms and Parmesan

Saved this recipe from a website somewhere years ago. This challenge made me finally try it out:

Changes: Didn't have any Parmesan so used some Emmenthal instead. Also didn't rinse the mushrooms because that's just not a thing you do here in Sweden. (Most repices actually tells you explicitly to NOT rinse them since that will make them soak up water and dillute the taste.)

Verdict: Easy and quick to prepare and made a tasty lunch. Next time I'll make sure to have some salad or other fresh veggies to serve on the side though.

I'm sorry you are ovenless! My dad used to make baked eggs in a toaster oven. One egg in a little custard cup with few tablespoons of stuff on top (chopped olives, tomato sauce, chives.)

Thank you, but no worries. I really liked the counter top oven we had, but it went belly up. I have a large oven attached to the stove, but I don't know how it works and the direction booklet is missing. I don't like heating up the whole kitchen anyway. I'll get the little one replaced one of these days. I lived without one for most of college years back in the day, so I can live pretty easily without one.
