Cajun Sausage and Rice Skillet

I made Cajun Sausage and Rice Skillet from Budget Bytes.

The recipe was easy to follow. As I couldn't find Anduille sausage I used hot Chorizo sausage instead. I also used frozen peas instead of peppers, putting them in during the last five minutes.

It was delicious though a bit too hot for my liking. Next time I'll use the mild Chorizo instead. It also freezes well and I think it will make some good leftovers.

I don't think andouille comes in mild, so making mild chorizo a permanent substitution here is probably a good idea

Looks like a good simple recipe. Should be easy enough to cut it in half, which would be about the right amount to make a couple of lunches for work.

That looks so good. I saved it for the future. You might also consider kielbasa as a replacement. It's a mild polish sausage if you don't care for spicy food.

Good tip. One of my local stores has a wonderful garlic kielbasa that would probably suit this recipe very well. Just got added to tomorrow’s grocery list. =]
