shallot pancakes [1/3 February]

I've had this bookmarked on my pinterest for a while, but needed kick in the pants to make it. Chinese/Lunar New Year seemed like the time!
These are favourites from yum cha in Sydney, and you don't really get them anywhere else - although in all honesty I've never looked for them. But finding the Omnivore's Cookbook has been fantastic, with a range of recipes right up my taste alley!

I made the recipe as the link described, no substitutions (the recipe said any fat or oil, and I had a jar of goose fat in the freezer so...it was fate), no adjustments.

It turned out pretty well. Could be saltier, maybe, but my sister always complains I'm lighthanded on the salt in any case.

And they freeze well! You can make a batch of them in advance, store them in the fridge, then defrost and fry when peckish. The only danger is that every time I'm hungry now, I'll think of these...
Definitely going to make again.
