Changes, Mistakes and Substitutions

My biggest mistake here was putting everything in the dressing, including the water, before mixing and checking for consistency. It was very runny, so I added more peanut butter.

No coriander.

Verdict

A major thumbs up for this. The dressing is the winner, I think, I imagine you could experiment with the vegetables quite a bit. I expect it would have been even nicer if I'd remembered to buy coriander.

I’ve been meaning to post this for months now, but today is finally the day!

Broccoli & Cheese Spaghetti Squash Casserole

This was tasty & fairly easy, but takes a while if you’re starting with an uncooked squash. The only thing I’d fiddle with is precooking the broccoli before the final bake because it was overdone to the point of being right on the edge of sulphuric. The leftovers made a nice lunch, too.

Rustic oat and peanut cookies

Tried out a new cookie recipe this morning, Rustika havre- och jordnötskakor. Since it's in Swedish I did ( a rough translation into English... )

Changes: Only used 150 ml sugar and 50 ml syrup. (There's far too much sugar in modern recipes for my taste.)

Verdict: Very tasty and quick and easy to make too so I'm definitely doing these again.
