I've never cooked with fish before, so I decided to try the following recipe. It's a very simple one from Better Homes and Gardens: New Cook Book, 1930-2000 edition.


Baked fish with mushrooms

Temperature: 450F

Ingredients:
1 pound fresh or frozen fish fillets (I used cod; recipe states any kind will do)
Salt
2 tbsp margarine or butter
1 cup sliced fresh mushrooms
1/2 cup sliced green onions (4)
1/4 tsp dried thyme, crushed
Paprika

Thaw fish if frozen. Cut into 4 serving-sized pieces, if necessary.

Arrange in a 2-qt baking dish, turning under thin edges. Sprinkle with salt.

In a small saucepan melt margarine; add mushrooms, onions, and tarragon.

Cook over medium heat until tender.

Spoon mushroom mixture over fish; sprinkle with paprika.

Bake, covered, in a 450 oven for 12 to 18 minutes or until fish flakes easily with a fork.



My adjustments:
450F seemed a bit hot, so after consulting with a relative who cooks fish often, I put it in at 375 for 25 minutes. This worked very well.

I sliced some orange bell pepper and placed the slices over top the mushroom/onion mix. A+ idea, would do that again.

I'm not afraid of cooking fish any more, and it tasted pretty nice, so I'd say this was a success. ;)
