I've been feeling nostalgic for succotash and Mom didn't leave her recipe so I'd book marked this version some time ago. I finally got around to making it.

This is very similar to what my Mom made when I was little. The only difference was that she used potatoes instead of squash. I used potatoes as well when I made this. She also used canned veggies, which I did as well. The corn and the potatoes were good, but the green beans weren't. I've noticed that a lot of things have changed during COVID. I don't know what to make of that. The green beans were stringy. If I made this again I'd leave those out. I guess that means I won't be making Green Bean Casserole any time soon.

This does sound good, but I think I'd go ahead and use summer squash as it's written. I tend to use frozen vegies instead of canned when fresh ones aren't available. I hadn't realized how much better they taste until I did a post-vaccination road trip to visit my mom. She served canned green beans and I was amazed at the taste and texture difference.
