I've had this Homemade Double Crumb Cake on my list of things to bake for a while now, because it does the ingenious thing of making the cake smaller than a 9x13" sized coffee cake, while keeping the amount of crumb topping the same, so the ratio of crumb to cake is much higher.

Ingredients
For the cake:

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp salt
1 large egg
1/2 cup milk, (or buttermilk for more moistness)
2 Tbsp canola oil
2 tsp vanilla extract

For the crumble topping:

2 1/2 cups all-purpose flour
1 cup light-brown sugar
1-1/2 tsp cinnamon
1 cup butter, melted and cooled (2 sticks)
powdered sugar, for dusting

Instructions
For the cake:

1. Preheat oven to 350F degrees.
2. Spray an 8 x 8 baking dish with nonstick cooking spray. (For a thinner cake, use a 9 x13 baking dish)
3. In a medium bowl combine 1 1/2 cups flour, sugar, baking powder and salt. Stir until combined.
4. In another bowl, combine egg, milk, oil and vanilla extract. Stir until it's all combined.
5. Combine flour mixture with milk mixture and mix well. Spread the batter into the prepared baking dish.

For the crumble topping:

1. In a medium bowl, combine brown sugar, flour and cinnamon. Mix it together well.
2. Then pour in melted butter and stir until combined and clumps begin to form.
3. Sprinkle those clumps (crumbs) all over the cake batter. If you are using an 8x8 baking dish - it will be thick.
4. Bake for about 40-50 minutes for an 8x8 dish. Bake for about 30-40 minutes for a 9x13 baking dish.
5. Use a toothpick to check for doneness (as oven times vary.) Check around the 30 minute mark.
6. Crumb topping should be golden brown and a toothpick inserted to the middle of the cake should come out clean.
7. Allow cake to cool then dust with powdered sugar and serve.

I made it as written (I used real buttermilk, because I usually have some on hand) and it is really easy - I didn't even need to use the mixer - and it's delicious. I would recommend it if you like a little less cake and a lot more crumb in your crumb cake.
