I've had this recipe saved on my phone for a while. I have no clue where I grabbed it. I wish I did so I could credit the author.
I thought it would be good for when I was visiting my brother. It only makes six nice-sized cookies.

The only difference I made was he was out of butter so I used softened cocoanut oil.

I never use pure vanilla I actually prefer Badia's Dominican style vanilla.

As for the chocolate chips I always swear with my regular cookies you never measure just go with what feels right in your heart. ;)

Seriously he had a bag of Reese's baking mix from Christmas and I used a good chunk of the bag. Any baking chip or M&M Resse's pieces type candy would work.

I baked until the edges were crisp on a parchment paper-lined cookie sheet.


Cookies
3 tablespoons salted, butter (1.5 oz, 42g), softened to room temperature

1/3 cup or 65g brown sugar (light or dark)

1 teaspoon pure vanilla

1 large egg yolk

1/4 teaspoon baking soda

75g all-purpose flour, or 2/3 scant cup
100g dark chocolate, chopped

Bake at 360 for 10 min on parchment
Yeild 6 cookies

I like this. As someone in a one person household,it's nice to have small batches of things

what you can do with large batch cookies, is form the dough into a log, slice off what you want to cook NOW, and freeze the rest (wrap it well so it doesn't freezer burn).

If you know you'd use about 6" of that big log, then cut the log into 6" small logs, and wrap and freeze them individually.

I absolutely *hate* doing things in the kitchen. So, that's one of many shortcuts that just make life JUST a little easier, long haul, lol. :)
