I have a lot of maple syrup in my freezer and have been looking to try making pancakes for the first time. I tried How to Make Pancakes for One
I found the recipe easy to follow and didn't make any substitutions. The mix was thick even after I tried adding milk to it. The pancakes came out a bit too thick and okay tasting. As this was my first attempt at pancake making I'm going to try the recipe again.

Date: 2021-01-07 03:17 am (UTC)If I were you, I'd use a whole cup of milk with that much flour, a third of a cup of butter, a tablespoon of baking powder, and a half a teaspoon of baking soda. I'd also use at least a full quarter cup of sugar and a full teaspoon of vanilla extract.
If you use buttermilk instead of milk (or half and half) you'll get a nice soft texture. And if you divide the eggs and fluff up the whites first, the pancakes will be super fluffy.
